Penny’s delicious coffee ice cream
Our admin goddess, Penny Hickinbotham, is a lady of many talents, including whipping up a number of amazing recipes. Here’s her recipe for the a refreshing and yummy coffee ice cream, which she says is delicious in any weather:
- 500 ml cream
- 4 eggs
- 1 large peanut brittle
- 1 can condensed milk
- 1 Tbs coffee essence (or 1 large tsp Nescafe dissolved in a little boiling water)
Directions
- Mix coffee with egg yolks and condensed milk
- Fold in slightly whipped cream and stiff egg whites
- Crush peanut brittle and place half of this at the bottom of mould
- Pour half the ice cream mixture into a long bread tin, then add the other half of the peanut brittle, and then the rest of the ice cream mixture
- Cover in Glad Wrap and freeze
- Turn out and slice to serve
